Ingredients

  • 4 very ripe (black) plantains
  • ½ cup canola oil
  • ½ teaspoon kosher salt

Steps

  1. Peel plantains and cut into quarters. Preheat oil in medium saucepan on medium 2–3 minutes.
  2. Add plantains to pan in batches; fry 4–5 minutes on each side until golden. Remove and drain on paper towels; season with salt and serve.

  1. Bake: Preheat oven to 425°F. Peel green plantains, slice thinly, and arrange on foil-lined baking sheet; drizzle with oil and bake 12–15 minutes until crispy.
